Receta para las barras de limón


Hey Everyone, for all you that speak English, go here for a great lemon bar recipe. I've been sharing it at many of our get-togethers lately, and it's been a hit!

That said, I'm going to share the Spanish version with our Chilean friends!

Para las barras de limón:

Los ingredientes son los siguientes -

Para la masa -
113 gramos de mantequilla (mejor si es derretida o tibia)
1/4 taza de azucar flor
1 taza harina
1/8 cucharadita de sal

Para la blandita en cima -
1 taza azucar
2 huevos
1/3 taza jugo de limón
1 cuchara de cáscara de limón (rallada)
2 cucharas harina


Precalentar el horno a 177°
Prepara un sartén con mantequilla.

En un recipiente bate la mantequilla con el azúcar flor, hasta que esté cremoso. Agregar la harina y sal y mezcla bien. Dispone la masa en el sartén oprimiendo con los dedos hasta cubrir totalmente el fondo del mismo. Dispone en el horno por 15 minutos o hasta que dore ligeramente.

Bate los ingredientes del relleno y disponerlas en cima de la masa que ha sido horneado. Dispone en el horno por 15 minutos más o hasta que el relleno está firme.

Sacar del horno y dejar enfriar partir en cuadros y después espolvorear azúcar flor al gusto.

Making Pudding!

The past few weeks I've tried my hand at making chocolate pudding for a few events (and for the two of us when one of us get a craving). They don't have any jell-o pudding mixes here, so it's all from scratch, but it really isn't as hard to make as I would have thought! Just go here for the recipe.

Market Steals!

Good morning everyone,
Just thought I would share with all of you the fabulous-ness that is the outdoor market here in Tome. Now, I know I've done other post on the market, but today I just had to give you an idea of the wonder that is the Feria.   Last week, I was all set to go to the market, and J was like - wait, you really think that they have the market in the dead of winter?? And I was like, oh...good point. Saturday market and the farmers markets for the most part shut down in winter in Portland. But, I thought I would give it a go anyway and alas, it was there! In full swing might I add. I don't know if it's the range of climates Chile has or what, but they seriously had all the fruits and veggies you could imagine at this farmers market....and nothing has a sticker that says Made in Peru or anything.


So, all that to say - here is what I bought this morning at our fair market :

- 1 kilo carrots
- 1 kilo tomatoes
- 1 kilo lemons
- 1/4 kilo olives
- 1 kilo bananas
- A bunch of beets
- Spinach
- 6 large onions
- 1 broccoli
...not to mention 20 pounds of potatoes that are in the white bag behind the bananas.

Awesome!! And, it was just under $10 dollars, a steal for sure!

Pear Muffin Recipe



Hello All!

So, with the lack of posts that we've put up, I thought I would post a recipe I started using a few months ago but just haven't put up on here yet! The great thing about this recipe is that it is super flexible and you can add just about whatever you want and it will turn out great. The recipe is originally from here  AND here - basically I mixed them both to get more of an oatmeal-based muffin. These are great for snacks or breakfast treats!


So here is more or less what I've used:

2 c. oats (quick or regular work)
1/2 c. packed brown sugar
1 tsp. cinnamon
1 tsp. soft butter
1 c. flour
3 tsp. baking powder
1/2 tsp. salt
1 1/2 c. chopped peeled pear (1 or 2 lg.)
1/2 c. milk (skim = healthier!)
2/3 cup plain non fat yogurt (I have also used strawberry - adds a bit more flavor without being too strong)
1 egg 


Combine oats, brown sugar and cinnamon. Remove 2 1/2 cups to large mixing bowl. Combine soft butter with remaining oatmeal mixture (I use VERY little butter, the oats and sugar stick to the top of the muffins pretty well once baked); set aside. Stir flour (again, you can use more oatmeal, less flour - whatever ratio you want), baking powder, and salt into oatmeal mixture in large bowl. Combine milk, yogurt, and egg. Pour into dry ingredients and mix just until moistened. Stir in pear (as much as you want! The more the better!). Spoon into 12 greased or lined muffin cups filling 1/2 full. (I usually have enough extra for 6 more muffins) Sprinkle reserved oatmeal mixture over tops. Bake for 12-15 minutes at 400 degrees. (They may take longer, I know my bake time is closer to 20 minutes, but most of my recipe times are different down in Chile....not sure why)

BEST Recipe...like ever

Jordan found this the other day, and put in a request for me to make it. Oh man, it was delicious. Good request J. Anyway, it is called Cinnamon Sugar Pull-Apart Bread, and it is a soft yeast bread with lots of cinnamon and sugar...simply magical. You can find the recipe here, and the narration of this woman will give you a laugh as well.

The best thing was also the sugar that had caramelized on the bottom of the pan, bonus!

You should really make this soon, it's totally worth the time!
